Extremely sharp. I bought the short version because I already own the long version and it is the most used knife in our kitchen. Would work perfectly in the field, but this will probably stay in the kitchen as it is just too good looking. Small, sharp and precise cutting. I use this for vegetables, fish and even deboning meat.
