Do not know `` how '' it works... just know that it `` does '' work..... need just one or two `` max '' swipes each time you need the extra edge... will add weeks between regular sharpenings. Just be sure to follow directions and do not pass the edge more than two times and do not put too much presure or they get `` too '' sharp!!!!!!!!!
