Extremely sharp. I bought the short version because I already own the long version and it is the most used knife in our kitchen. Would work perfectly in the field, but this will probably stay in the kitchen as it is just too good looking. Small, sharp and precise cutting. I use this for vegetables, fish and even deboning meat.

Great knife im not an expert fish fillet guy bought this knife a month ago and fillet up some kelp greenling and striped perch i caught of the newport jetty here in Oregon and all i got to say is wow. I used the product to filet 15 Croakers. Took me less than 1 min each. Would have taken me 4 times that time with my limited skills. Served its purpose. Happy with the purchase. Not thrilled about the price.

This knife was a birthday gift two years ago. After cleaning 1200 or so perch and a hundred walleye I would recommend for moderate use. Plenty of power and the blades have lasted well cutting through perch bones. Would n't use on walleye bones. The one thing that has broken was this ridiculous safety which was more of a hazard. Since its demise the knife is great. Look forward to using it this year again!

The clamp on the end of the Fillet Board is the best! It holds the tail of the fish while you gill and gut, scale, or fillet. I just got mine and used it for the first time yesterday on a couple of medium sized papio caught in Hilo Bay, HI. It was a treat to use!
